Expert Jannes Koetsier

A few years ago, Gazi Nabil took over Meat Man in Dhaka, Bangladesh with the ambition of making it a leader in the country’s meat sector. The beginning was not easy, partly due to outside influences, but the drive to improve remained strong. One of the biggest challenges is the absence of proper butcher training in Bangladesh.

To address this, Meat Man has been working with PUM expert Jannes Koetsier, who is now on his fourth visit to Bangladesh. Over time, Jannes has come to truly appreciate the country and its people, and his ongoing commitment reflects the long-term approach needed for real change.

Together, they focus on very practical steps: exploring the market and competitor products, improving steak wet-aged processing for better tenderness and flavour, experimenting with deli items and standardising recipes, training staff in hygiene, improving product quality, and learning to work more efficiently. Each of these activities strengthens the company’s foundations.

The result is a well-run company where food safety, hygiene, environmental management, and social aspects are always high on the agenda. With the many contacts of Meat Man’s owner, Gazi Nabil, these improvements can eventually reach other companies as well. It is a long-term process that will require more visits and dedication, but the potential for impact is wide-reaching.
