Tin Marin collaborates with PUM to boost sustainable growth and go global
Tin Marin is a restaurant based in Boyacá, Colombia, with the ambition to expand locally and, eventually, also internationally. Together with PUM, they have analysed their current situation and defined a sustainable growth strategy, focusing on improving efficiency and reducing costs. This strategy also includes better use of resources, such as solar energy and wastewater management, as well as creating jobs and improving working conditions.
Tin Marin is a restaurant specialising in traditional Colombian cuisine. Launched in 2016, it operates two locations in Boyacá – one in Tunja and another in Villa de Leyva – offering both table service and home delivery. Natalia Tolosa Vargas, the owner, runs the business with her three family partners. Tin Marin aims to expand nationally through new outlets and franchising, with plans for international growth.
However, as part of this growth process, the company has faced several challenges. Tin Marin needs to improve its internal processes, both administratively and operationally. The menu at its large Tunja location, with 40 dishes, is too extensive compared to the smaller branch, which has a more focused menu. Additionally, the central kitchen, which prepares and distributes food to both locations, could be better utilised to support the expansion of a potential franchise model.
Long-term vision
To achieve its long-term vision including ambitious goals, Natalia sought collaboration with PUM. Together with PUM expert Mariette Swart, she worked on improving efficiency, reducing costs, and strengthening the restaurant’s brand. Acting as a sparring partner, Mariette analysed the operations in both qualitative and quantitative ways, focusing on how to optimise processes, particularly with the central kitchen playing a key role in the company’s growth. They explored growth opportunities, market dynamics, competition, customer experiences, and the pros and cons of independent growth versus franchising. Mariette commented: “The goal of my visit was to understand the situation, see if it meets expectations, and determine how improvements can be made. After the visit, I will stay in contact with Natalia online to monitor progress and address any questions.”
Social and ecological impact
Tin Marin has the potential to play an exemplary role in the local and regional economy as an innovative organisation with strong marketing, investment in its employees and an eye for social and ecological impact. The growth strategy fully considers these elements. Socially, this means improving wages, creating new direct jobs, investing in social initiatives to support vulnerable groups, and enhancing workplace well-being and the organisational environment for all the staff. Ecologically, the focus will be on implementing solar energy to power their locations, improving wastewater management, and ensuring the efficient use of electricity.
